Torre Lupara was acquire by Ugo Jemma in 1944, and where only tens of animals grazed natural grasses of low nutritive value. A system of roads was gradually constructed in 1964, this and many others projects are the accomplishments of forty years work, wich has brought the farm to its present level.

The drainage of the fields has allowed for mechanization, fertilization and thus, self-sufficency. Concerning forage production, more than 140,000 quintals sustain 1.600 bufalos abundantly, of which more than half are in milk production. All of the animals are recorded in the official breed register. The buffalos have at their disposition large paddocks with a specially designed pool in each to bathe in hot water. In the zoothecnic sector, artificial insemination of the buffalo is practiced on large scale. A modernly equipped laboratory build for that purpose now performs experiments for embryo transfer. The buffalos are milked in a modern 24 position parlor with automatic take-off. All the milk produced is processed daily in a modern plant equipped with all of the latest machines, but continues the tradition of the careful production of LUPARA buffalo mozzarella.

Lupara mozzarella is in a great demand for its quality and genuiness. Professor Ross COCKRILL, one of the most important authorities on the buffalo, has said:"I mantain that it would be impossible to find the degree of efficiency, like that found at Torre Lupara".
